Hi, I’m Lauren.
I switched to a gluten-free diet on a trial basis as a last-ditch effort four years ago. After years of failed attempts to solve a skin condition I developed in middle school, I was frustrated with the lack of progress. My skin cleared up within a week of cutting gluten out of my diet, and I haven’t eaten gluten since.
For me, a gluten-free diet is about adjustment, not sacrifice. I still love to cook, try new foods and eat out with friends, I just approach these situations with a new mindset.
